Here are the best vegan recipes for thanksgiving 2015. Thanksgiving is steadily approaching. For most, thanksgiving is a time to pig out on delicious meaty and carb-filled foods, but these traditional meals leave out a large part of the population.



Baked Sweet Potatoes


This mouth watering meal will fill you up real quick.

4 medium sweet potatoes*
1 15-ounce can chickpeas, rinsed and drained
1/2 Tbsp olive oil
1/2 tsp each cumin, coriander, cinnamon, smoked (or regular) paprika
Optional: Pinch of sea salt or lemon juice
1/4 cup hummus (or tahini)
juice of 1/2 lemon (~1 Tbsp)
3/4 – 1 tsp dried dill (or sub 2-3 tsp fresh)
3 cloves garlic, minced
Water or unsweetened almond milk to thin
Optional: Sea salt to taste (I didn’t need any)
TOPPINGS: (Optional)
1/4 cup cherry tomatoes, diced
1/4 cup chopped parsley, minced
2 Tbsp lemon juice
Chili garlic sauce

Velvety Mac n’ Cheese


Savory, spicy, and an untraditional dish for thanksgiving.

10 ounces large macaroni shells (gluten free for GF eaters | I used pipe rigate)
1/2 white onion, diced
3-4 cloves garlic, minced
1 cup raw cashews, soaked for 4-6 hours or overnight, then drained
1 1/2 cups vegetable broth
1 Tbsp cornstarch
1/2 tsp cumin
3/4 tsp chili powder
2 Tbsp nutritional yeast
1 4-ounce can diced chills (scoop half into the sauce, reserve half for the finished mac n cheese)
Optional: 1 cup tortilla chips, fresh cilantro for topping

Tofurky Wrapped Asparagus


Just sub out bacon for tofurky in this recipe.

Beet Hummus and Chickpea Crostini

This super easy and effortlessly customizable appetizers wll keep your guests happy while waiting for the main course.



15½ oz. chickpeas
1 beet, cooked
1/4 c. olive oil
3 tbsp. mint
2 Garlic cloves
1 tbsp. lemon juice
3/4 tsp. ground cumin
Kosher salt
16 baguette slices, toasted

3/4 cup julienned carrots

1/2 cup halved green beans 2 tablespoons soy sauce 2 1/2 tablespoons water 1/4 cup chopped onion

1 tablespoon vegan granulated sugar
1 tablespoon white vinegar

1/2 cup unrefined virgin or extra-virgin coconut oil (packed)
4 to 6 tablespoons ice water
One 15-ounce can pure pumpkin puree
8 ounces silken tofu
2/3 cup vegan granulated sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon pure vanilla extract
Fine salt
